Amaranthus tricolor L.

Joseph's Coat

Flower spikes green to purplish, mostly axillary. Perianth segments of female flowers 1-4. Mostly grown for the variously coloured leaves (narrow in var. salicifolia and red in 'Splendens'). Sometimes used a a leaf vegetable. [A. gangeticus L.] Cultivars may be banded with yellow and green.
